High-Protein French Toast

Who doesn’t love an indulgent brunch on a Sunday morning? With this recipe, you won’t have to choose between decadence and your health goals! It packs 28g of protein, complex carbs, fruit, and healthy fats to keep you energized and feeling good.

Brunch just got healthy

Ingredients:

1 egg

2 tbs unsweetened oat milk

1 tsp vanilla extract

1 tsp cinnamon

1 scoop of collagen

Crack of salt

Bread of choice (mine is homemade sourdough)

7g Kerrygold salted butter (the saltiness makes the dish, trust me)

Directions:

Combine all ingredients and then soak bread in the mixture. Do one slice at a time for multiple pieces.

Heat butter over medium heat and add the soaked bread.

Cook for about 1-2 minutes per side until golden brown.

Top with your favorite toppings. I was feeling tropical today so I did:

40g diced pineapple

56g banana

9g chopped macadamia nuts

5g unsweetened coconut flakes

1 tsp maple syrup

I was also feeling bougie so I put my kombucha in a champagne flute and had a double espresso. Hey, it was Sunday Funday after a long, trying week, I wanted to treat myself.
