Chocolate Peppermint Protein Donuts

A treat that pairs perfectly well with coffee and opening Christmas presents? Say less. These donuts have 10g of protein per serving and the perfect flavor ratio of peppermint to chocolate.

I used Edge Fitness Performance Whey protein powder so I’m going to make a note about baking with whey protein powder at the end. It can be a little drier but there are ways to negate that! You don’t have to use protein powder if you don’t want to, so that’s totally fine too.

Dry Ingredients:

  • 1/2 cup + 2 tbs almond flour

  • 1 scoop of protein powder of choice. I used Edge Fitness Performance Chocolate Whey (code Boltz saves you 10% and helps me continue to work as an athlete and coach.)

  • 1/2 tsp of baking powder

  • 1 tbs coconut sugar

  • 1-1/12 tbs cacao powder

  • pinch of salt

Wet Ingredients:

  • 1 egg or 2 egg whites

  • 1/4 cup non-fat plain greek yogurt

  • 2 tbs oat milk

  • 1 tsp peppermint extract

  • 1 1/2 tbs coconut oil, melted

Glaze Ingredients:

  • 2 tbs powdered sugar

  • 1 tbs oat milk

  • Crushed candy canes

Directions:

  • Preheat oven to 350 if you’re using casein, vegan protein powder, or forgoing protein, 325 for whey.

  • Combine dry ingredients in a bowl and create a little divot in the middle for the wet ingredients.

  • In a separate bowl. whisk together wet ingredients until fully combined. Pour into the dry ingredients and slowly stir. Be careful not to over-mix the batter, otherwise, you will have some tough donuts.

  • Spray a 6-donut pan and pour the batter in. Level off the batter and place on the middle rack in the oven. Bake for 12-16 minutes for non-whey varieties and 10-12 minutes for the whey version of the recipe.

  • Allow to cool and transfer to a wire rack.

  • Once the donuts have cooled, whip up the glaze and then proceed to dip each donut in the glaze. Circle the donut around to coat the top.

  • Crush candy canes and sprinkle them on top. You can also drizzle white or regular melted chocolate on top if you want! Get creative with it.
