The Fluffiest Oats Ever!

Oatmeal can be a little drab but you can easily fix that with a ssecret ingredient….

Egg whites! Yep! Whisking a few egg whites into your morning oats not only adds body but also adds in more protein. This recipe has been a staple for me this fall and winter but it’s easily modifiable for other seasons. If you want to make this vegan friendly, stir in some vegan protein powder or even try using the water from canned chickpeas called aquafaba.

Ingredients:

40g quick-cooking oats
80ML water or oat milk
1 teaspoon cinnamon
1 teaspoon vanilla extract
Pinch of sea salt
1 tbs peanut butter
4-5OZ egg whites
toppings:
1 tbs hemp hearts
80-100g chopped apples, sautéed or raw. I like raw for a crunch.

Directions:
Combine oats, water, cinnamon, vanilla, and salt in a bowl. Microwave for 30 seconds.

Add in egg whites and stir. Then, microwave in 30-second increments for 90 seconds to 2 minutes. Stir every 20-30 seconds to avoid clumping. It’s done when the egg whites have almost set and then stir them in. As it cools, add in your peanut butter and chopped apples. Top with hemp hearts and cozy up!
