Catch Waves, Not Heat: No-Stove Dinners
I’m getting to the age where I understand why my mom didn’t want to turn on the oven in the summer. Or maybe I just live in South Florida. Regardless, I wanted to share these no-stove necessary dinners that are delicious and refreshing.
Sunset Salmon Ceviche
Serves 1
3-4 ounces of raw salmon, sushi-grade is best
1/4 tsp fresh grated ginger
1/2 lime squeezed
40g pineapple, finely chopped
50g tomato, chopped
10g diced red onion
Salt
60g avocado
Directions:
Dice your salmon into 1-inch pieces and set aside.
Cut up your pineapple, tomato, red onion, and grate your ginger.
Combine your produce and salmon into a bowl. Slice your lime in half and squeeze one half over the salmon, coating it completely so that it cooks evenly.
Cover and set in the fridge for up to 1 hour. Remove from the fridge and slice your avocado into bite-sized pieces. Stir in avocado and enjoy with tortilla chips (Siete is the bomb!!), rice, or on its own!
Shoreline Summer Rolls with a Creamy Sesame Sauce:
Serves 1:
For the rolls:
1 small cucumber, sliced into slivers
1/4 bell pepper, also sliced into thin slivers
3 ounces of chicken breast, sliced into think slivers
Optional: kale massages in 1tsp sesame oil and salt
3 summer roll wrappers
For the sauce:
16g sesame paste or tahini
5g red Thai chili paste
1 tsp soy sauce
1 tsp sesame vinegar
1 clove of garlic, finely chopped
1/4” of ginger, freshly grated
Water to desired thinness
Directions:
dip one wrapper into a bowl of warm water and place onto a flat surface. Place a tiny bit of each ingredient for the rolls in but be careful not to overfill it. Fold the bottom up first pulling the ingredients down toward you. Fold in the sides and continue to roll until it’s sealed.
Set aside and repeat with the other two wrappers.
For the sauce, combine all ingredients into a bowl. Add in water until you reach your desired consistency.
Dip your rolls and enjoy!!
