How are we doing?! We’re in the fourth week of our challenge and I’m sharing recipes to help you finish strong! I’m giving you a new recipe and sharing a few favorites that have been on repeat.
Introducing your new go-to, protein-packed, savory omelette! It features asparagus and leeks to give it a seasonal flare that just screams spring.
Springtime Omelette:
1 egg + 3-4 egg whites
70 g asparagus, chopped
1” of leek, chopped
Salt and pepper
Optional: 1 ounce of feta or low-fat Swiss cheese
Arugula to garnish
Directions:
Chop asparagus into bite-sized pieces and chop up the leeks.
Whisk together the egg and egg whites before seasoning with salt and pepper before setting aside.
Heat a pan over medium heat and add cooking spray or a bit of olive oil.
Add in asparagus and allow it to cook until the asparagus is a vibrant green and slightly soft. Lightly season with salt for additional flavor.
Throw in the leeks until fragrant and then pour in the egg mixture.
Swirl the egg mixture around so that it evenly coats the pan.
Put a lid on top of the mixture and allow the omelette to cook. Once the top has almost set, flip the omelette, turn off the heat, and add in the cheese if you’re using it.
Fold it over and serve with a side of seasonal fruit, avocado toast, and maybe some crab cake on top ;)
