Gluten-Free, High-Protein Pumpkin Recipes

I hear a lot of people struggle to hit their protein goals so I thought I’d give you a few of my favorite fall recipes to help you reach those numbers. Of course, because it’s fall, they’re pumpkin-flavored. Pumpkin may be considered “basic” but it has TONS of nutrients such as vitamins A and C, potassium, and iron. You can enjoy pumpkin in smoothies, chili recipes, baked into bread as well as pancakes, and more!
Not Your Mama’s PSL:
3 oz cold coffee (cold brew or just coffee that’s been chilled is fine)
3 oz unsweetened oat milk
200g frozen banana
80g pumpkin pureé
85g frozen riced cauliflower
1 Scoop of Edge Fitness Performance Salted Caramel Protein Powder (code BOLTZ saves you $$)
1-2 tsp of pumpkin pie seasoning
dash of cinnamon
pinch of sea salt
**This is my post-workout recipe but if you’re having this as a meal replacement, add in 1tbs of almond butter)
Directions: Combine ingredients in a blender and blend until smooth!
Macros: 31P/57C/5F *not including almond butter*
Protein Chocolate Chip Pumpkin Mini Muffins:
3/4 cup of oat flour (I blended oats to make my own)
3 scoops of protein powder (vanilla or salted caramel would taste amazing in this recipe)
1/4 tsp baking soda
1/2 tsp baking powder
2 tbs enjoy life mini chocolate chips
1 tsp vanilla extract
85 g fat-free cottage cheese
2 tbs maple syrup
75g pumpkin
1/2 cup oat milk
1 tbs chia seeds
1 egg
1 tsp sea salt
1 tbs + 1 tsp of pumpkin pie seasoning
Directions:
Pre-heat oven to 350
Combine all dry ingredients in a bowl and mix. Set aside for now.
Put all wet ingredients into a blender and blend for about 15-20 seconds until smooth. This is how we get rid of the lumps in the cottage cheese.
Slowly combine the wet and dry ingredients but be careful not to overmix! Just stir enough to combine the ingredients.
Spray a mini muffin baking sheet with a non-stick spray and spoon batter into the molds. Bake for 20-25 minutes and test with a toothpick. If it comes out clean, they’re done!
Set on a cooling rack until cool and enjoy! I like to add these to Greek yogurt with some figs and granola for carbs and additional protein.
