Pumpkin Fig Protein Oatmeal

Fall is in full swing and I can’t think of a better way to start the day than a warm bowl of fall flavors with over 20g of protein! Figs and pumpkins offer tons of vitamins and minerals to nourish your body such as vitamin C to boost immunity as well as fiber to keep you fuller longer.

Ingredients:

40g quick-cooking oats
180ML water or oat milk
1 teaspoon pumpkin spice blend
1 teaspoon vanilla extract
Pinch of sea salt
50g canned pumpkin (NOT pumpkin pie filling, there’s a massive difference)
5OZ egg whites


Toppings:
1 tbs almond butter

10g pumpkin seeds

50g of fresh figs, sliced

1 tsp of maple syrup

Directions:
Combine oats, water, cinnamon, vanilla, and salt in a bowl. Microwave for 30 seconds.

Add in egg whites and pumpkin then stir. Then, microwave in 30-second increments for 90 seconds to 2 minutes. Stir every 20-30 seconds to avoid clumping. It’s done when the egg whites have almost set and then stir them in. As it cools, add in your peanut butter, pumpkin seeds, and figs. Drizzle with maple syrup and savor the flavors of fall.
